Mother's Day desserts:

Today is Mother's Day,and it's not a celebration without cake.

We'll give you a recipe for a fluffy cake that will make a great addition to your Mother's Day celebrations .

Whether your mother likes cookie cake, chocolate, vanilla, strawberry, we've got a dessert your mom will love,and you can be served with other Mother's Day desserts to wrap up in a dessert tray as a tasty gift .

Chocolate Raspberry Cake

It's dramatic and beautiful the cake , and yet it’s quite simple to create
This cake Start with your favorite chocolate cake recipe, then add layers of delicious raspberry buttercream and fresh raspberries. 

THE BEST CHOCOLATE CAKE RECIPE

INGREDIENTS:


2 cups sugar (400 grams)
1 3/4 cups all-purpose flour (210 grams)
2 eggs
1/2 cup vegetable oil (120 mL)
2 tablespoons King Arthur Flour Black Cocoa, optional (11 grams)
2 teaspoons baking soda (12 grams)
1 teaspoon baking powder (4 grams)
3/4 cup unsweetened cocoa powder (64 grams)
1 teaspoon  salt (6 grams)
1 cup buttermilk (240 mL)
2 teaspoons vanilla extract (4 grams)
Chocolate Buttercream Frosting

INSTRUCTIONS:

1-Heat oven to 350°F. 
2-Grease and flour two 9-inch round baking pans or one 13x9x2-inch baking pan. 
Set aside.
3- In a large bowl with an electric mixer, combine the sugar, flour, cocoa(s), baking soda, baking powder and salt. 
4-Mix on low until dry ingredients are thoroughly combined.
5- Add eggs, buttermilk, oil and vanilla. Beat on medium speed for about two minutes; the batter will be thin.
6- Pour batter evenly into prepared pans.
7-Bake in preheated oven for 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden toothpick inserted in center comes out clean.
8- Cool 10 minutes; remove from pans to wire racks. Cool completely.

RASPBERRY BUTTERCREAM:

INGREDIENTS:

1/2 cup (1 stick) unsalted butter
4 oz (1/2 package) cream cheese
3 1/2 cups powdered sugar
1 Tablespoon milk or cream
1 teaspoon vanilla
1/4 teaspoon salt
pink food coloring (optional)
3 Tablespoons raspberry jam (preferably pure fruit, no additional sugar)

DIRECTIONS:

1-In the bowl of an electric mixer, beat butter until smooth. 
2-Add cream cheese and beat until fully combined and smooth.
3-Add 1 cup powdered sugar and blend. 
4-Add 1 Tablespoon of raspberry jam and blend.
5-Add vanilla and salt (only add salt if you’ve used unsalted butter)
6-Continue blending and add another cup of powdered sugar, and 1 Tablespoon of jam. 
7-Repeat with the last 1 1/2 cups powdered sugar and remaining tablespoon of jam.
8-Beat until well blended, smooth and fluffy. Slowly add 1 Tablespoon milk or cream and blend another 20 seconds or so. 
9- If desired, add a drop of concentrated pink food coloring (or red liquid food color).
10- Spread the frosting onto the cake layers using an offset spatula.
